Summary
Torches must be equipped to be used, taking the place of your sword. Each higher level of torch casts a wider area of light and lasts longer. Torches can help you find items at night, allow you to read scrolls at night, or route away from night monsters (which move much more erratically than day monsters, not unlike Pumphantasms). If a night monster does hit you and you have a torch equipped, you take less damage. When you unequip them (voluntarily or not), when they are doused (e.g. by stepping on a Rust Trap), or when they burn out, they vanish from your inventory. Typically, torches can be found commonly in locations that can experience night, but can't be found in locations that can't experience night. Torches can be blessed or sealed, but not cursed. If blessed, presumably they last longer, though this has not been explicitly tested and confirmed. If sealed, they can't be used and do only 2 damage if thrown as a projectile.
No one has yet measured how long each torch lasts. Empirically, torches seem to degrade one level of brightness radius every half-night. (Different locations may have different lengths of day and night, but this experience is true in Destiny's Descent.) In other words, if you equip an unblessed Super Torch the moment night starts, it should degrade to a light radius of 2 halfway through the night, and night should end right as the Super Torch is about to degrade down to a light radius of 1. So, a single Super Torch can last the entire night while still allowing you a safe vision distance, so long as it's not snuffed out prematurely. On the other hand, a single unblessed Fine Torch will only provide a vision radius of 2 for half the night, after which point it becomes very dangerous to move around. (With a vision radius of only 1 and no way to see monsters remotely, the odds of inadvertently moving towards a monster then being one-shot-killed are dangerously high.)
Torches can help during the day too, as if you are in a hallway, you can see the torch's vision radius, which isn't normally true during the day. This doesn't work while you're in a lit room however. Still, if you're contemplating theft, it doesn't help much to have a weapon equipped so it might be a good idea to equip a torch to help avoid shopkeepers in hallways, depending on your specific heist plan.
