Catfish doesn't really have a strong gimmick unlike the first two guardians where you were encouraged to use melee and ranged tactics respectively. He did say he rather fight fair and square after all. You can utilize your throwing items when catfish is at a distance and hope he wastes turns approaching you, or you can get up in his face and attack him to death without issue. Once he is close, just move in both characters next to each other to have them dispatch catfish in no time. In his repertoire, Catfish can cause an earthquake that does room wide damage to your whole party. He can also spray water at your characters in a straight line for a single target ranged attack, and his regular melee attacks are fin slap and whisker whip, which essentially do the same thing. As per usual for this game, you can tackle the boss by keeping a lot of healing items on hand like {{Shiren3Wii|Recovery Staff|Recovery Staves}} and {{Shiren3Wii|Chiropractic Jar}}s and any of the {{Shiren3Wii|Herb}}s that restore health, using them when you need to. A decent {{Shiren3Wii|Shields}} will minimize catfish's threat as he lacks any special tricks outside of direct damage. If you pay attention to the stats graph, you will notice that he is barely more powerful than Eagle was, and like with all bosses, his {{Shiren3Wii|Dragon Orb}}s resists all negative effects of {{Shiren3Wii|Staves}} and herbs and the like.
