Summary
Peaches are another major form of food in Shiren 5. (Onigiri are a primary source of food, and eating Grasses also restores a small amount of fullness.) Peaches ripen and rot naturally, from Hard Peach -> Peach -> Juicy Peach -> Rotten Peach. Working theory is that Peaches can only transform to the next form in the chain when you change floors, and only when they are in main inventory, and they only have a 33-50% chance to do so every time you change floors. (Needs confirmation.) Rotten Peaches do not transform into any other item, no matter how many times you change floors. Unlike Rotten Onigiri, there is no known way to "recover" a Rotten Peach into a more useful form.
The three earlier forms of Peaches all have excellent, useful magic effects. The food value and magic effects get stronger and rarer as it ripens to a Juicy Peach, but the player may prefer the benefits of earlier forms. (For example, aside from a Juicy Peach, there is only one known way to get something like Enduring status, which is via a possible random effect on a secret pot / new item bracelet, and that effect is not guaranteed to trigger either. That being said, the player may prefer the earlier form of the Peach, even though it has less food value, as the magic effects of the Peach may be more useful in the current situation.)
Players may want to carry "lesser" forms of Peaches around in their main inventory to let them ripen to the desired form, then store them in pots such as a Preservation Pot for later use. If you do this, double check your main inventory before changing floors to make sure you aren't risking the loss of a Juicy Peach. Note also that being affected by a Decay Trap will turn all types of Peaches in main inventory into Rotten Peaches. It is not known if keeping a type of Peach in a pot for most of the floor then bringing it out just to change floors interferes with normal ripening.
Peaches are even more useful at night. Per their descriptions, they all restore some night abilities, the the details have not been precisely documented. (Does each type of Peach restore a fixed number of abilities chosen at random, or do they just have a percentage chance to restore any given used night ability?) Working theory is that Juicy Peaches, Peaches, Hard Peaches, and Rotten Peaches have a 100%, 75%, 50%, and 25% chance to restore each used night ability respectively, but this definitely needs more testing. Unlike Torches, Peaches can appear in dungeons even when those dungeons cannot experience night.

However, you'll be afflicted with Weakened status and Wizened status. | Restores ~30 fullness, gives Weakened status (decreased attack) and Wizened status (decreased defense) which clear up in ~10-50 turns, and restores some night abilities if you've used some already on the current floor. |
